Basic Baking Mix
A basic baking mix for biscuits, pancakes, etc. to use instead of a store bought, more expensive baking mix.
- 6 cups All-Purpose flour
- 3 tbsp. baking powder
- 1 tbsp. salt
- 3/4 cup shortening
Using a food processor, combine the flour, baking powder and salt. Pulse for 15 seconds. Add the shortening and pulse until the mixture is similar in texture to cornmeal.
If you do not have a food processor sift together the flour, baking powder, and salt into a large bowl. Cut in the shortening with a fork, pastry blender or two table knives (cutting cross-wise to each other) until the mixture is similar in texture to cornmeal.
Store in a cool, dry place.
